With the sun shining, most people were smiling today and feeling that they had much for which to be thankful. But with these temperatures, I really did not want the oven on for three or four hours so the decision was made to cook the turkey on our gas grill, resulting in a resounding success! Yummy! I made the two types of stuffing separately in two Pyrex casseroles which went in the oven for less than one hour. While the stuffings were in the casserole I made a new (to me) version of pumpkin pie in the lime green Pyrex pie pan that I found Thanksgiving weekend last year. I have a serious allergy to eggs which presents a challenge when baking. We also have gluten intolerance in the house which is also challenging when baking and especially so with the lack of eggs. On previous Thanksgivings I have been unsuccessful in my search on the Internet for a suitable recipe but today's search yielded a winning result: Gluten-Free Pumpkin Pie! It was slightly different than pie made with egg (that I recall) and tastier than those made with tofu. Everyone loved the pie and it was gone in about fifteen minutes.
While I do not expect that we are likely to have such warm weather for Thanksgiving in the future, the other changes were ones with which we can be both happy and thankful.
Love the green pie plate...it could easily find a home in my green kitchen.
